“Saddle N” means “Tap any number of other untapped creatures you control with total power N or greater: This permanent becomes saddled until end of turn. Activate only as a sorcery.”
“Saddled” isn’t an ability that a creature has. It’s just something true about that creature. It won’t stop being saddled until the turn ends or it leaves the battlefield.
Creatures with saddle can attack or block as normal even if they aren’t saddled.
If a permanent becomes a copy of a saddled Mount, the copy won’t be saddled.
You may activate a permanent’s saddle ability even if that permanent is already saddled.
An ability that triggers when a creature “attacks while saddled” will trigger only if that creature was saddled when it was declared as an attacker.

Flying Rule 702.9
Flying is an evasion ability.
A creature with flying can’t be blocked except by creatures with flying and/or reach. A creature with flying can block a creature with or without flying. (See rule , “Declare Blockers Step,” and rule , “Reach.”)
Multiple instances of flying on the same creature are redundant.
Saddle Rule 702.171
Saddle is an activated ability. “Saddle N” means “Tap any number of other untapped creatures you control with power N or greater: This permanent becomes saddled until end of turn. Activate only as a sorcery.”
Saddled is a designation that has no rules meaning other than to act as a marker that spells and abilities can identify. Only permanents can be or become saddled. Once a permanent has become saddled, it stays saddled until the end of the turn or it leaves the battlefield. Being saddled is not a part of the permanent’s copiable values.
A creature “saddles” a permanent as it’s tapped to pay the cost to activate a permanent’s saddle ability.
Haste Rule 702.10
Haste is a static ability.
If a creature has haste, it can attack even if it hasn’t been controlled by its controller continuously since their most recent turn began. (See rule .)
If a creature has haste, its controller can activate its activated abilities whose cost includes the tap symbol or the untap symbol even if that creature hasn’t been controlled by that player continuously since their most recent turn began. (See rule .)
Multiple instances of haste on the same creature are redundant.
